Sierra Cantabria Gran Reserva valmistatakse 100% Tempranillo viinamarjadest. Viinapuude vanus on üle 30 aasta ning saagikus 29 hl/ha kohta. Viinamarjad koristatakse oktoobri viimastel nädalatel ning veinimajja jõudes läbivad nad hoolika selekteerimise.

Käärimine toimub 8 päeva 28-32 kraadi juures ning veinivirre on kestadega kontaktis 21 päeva. Vein laagerdub 24 kuud Ameerika tammevaatides, millest 25% on uus ja 75% kuni kolm aastat vana. Pudelisse villitakse vein ilma filtreerimata.

Aroomis on intensiivne ja jõuline, tunda on küpseid punaseid puuvilju, balsamico’t, vaniljet ja pehmet tamme nooti. Maitse on värske, siidine, küpsete tanniinidega, tunda on vürtse, balsaamikot, kohvi ja küpseid punaseid puuvilju. Toitudest sobib ideaalselt poolküpse lihaga, hautistega, metslooma lihaga ning foie gras’ga. Serveerida temperatuuril 18 kraadi. Vananemispotentsiaal on 20 – 25 aastat.
