Oak Reserve on Gusbourne’i kõige uuem vein, valmistatud 100% Chardonnay viinamarjadest, mis on kasvanud Gusbourne’i Kent’i (80%) ja Sussex’i (20%) veiniaedades. Pressitakse terved kobarad, 50% veinist kääritatakse 10 päeva 4,000 liitri suurustes foudres tammevaatides, 50% kääritatakse 10 päeva 500 liitri ja 228 liitri suurustes tammevaatides, 100% veinist läbib malolaktilise käärimise. Vein on villitud pudelisse augustis 2022, pudelis settel küpsenud minimaalselt 33 kuud, disgorgement 24. aprill 2025, dosage 6 g/l kohta.

“Gusbourne Oak Reserve 2019 is the boldest expression of English sparkling Chardonnay yet. A wine that embraces structure, spice and generosity, Oak Reserve was born from a series of experimental trials and the introduction of large-format oak vessels (foudres) into the winery. “It’s not shy. It’s a wine with presence,” says Mary Bridges, Head Winemaker. “There’s tropical fruit generosity from the foudre – pineapple, mango – alongside savoury spice from the smaller barrels,” says Bridges. “There’s citrus oil and gingerbread on the nose, with a creamy palate and a very long finish. Innovation at Gusbourne doesn’t mean throwing out the rulebook. It’s about working with precision, understanding our fruit, and being willing to push the boundaries. In the glass, this is bright gold with fine, persistent bubbles. The nose is brimming with aromas of ripe peach, honey-lemon and toasted hazelnuts. The palate shows ripe orchard fruits, stone fruits and citrus notes, alongside a pronounced toasted character – think buttered toast, toasted nuts and soft, sweet spice. There’s a beautiful weight and creamy texture in the palate, leading to a long and complex finish. Serve with richer fish or lighter meat dishes, such as roasted chicken with morels; baked cod with butter beans and chorizo, or a caramelised onion tart.” Mary Bridges – Head Winemaker
