Excelsior on ‘Goulaine’ cru communal (grand cru) tähistusega vein, nendele veinidele kehtivad rangemad reeglid, madalam saagikus ja vein peab settega kontaktis olema vähemalt 24 kuud. Excelsior on üksikaia vein (Clos de Noelles), mille veinipuud on istutatud 1936. aastal. Pinnases on peamiselt kvartsirikas kiltkivi (schistes) ja vilgukivi (micaschistes). Viinamarjad koristatakse käsitsi ja pressitakse õhusurvega (pneumatic). Saagikus on 35-40 hl/ha kohta. Kääritamine kestab 4 nädalat 20 kraadi juures ainult naturaalse pärmi abil, vein laagerdub väikestes maaalustes betoonmahutites settega kontaktis 29 kuud.
Aroom on väga komplekssne, sügav ja puhas, tunda on rohelist õuna, sidrunit ja sidrunheina. Maitse on täidlane, fokusseeritud, hea tasakaalu ja struktuuriga. Pikas järelmaitses tuleb esile mineraalsus ja meeldiv happesus. Serveerida 12-14 kraadi juures ning soovitavalt dekanteerida. Vananemispotentsiaal 20+ aastat.
