Bollinger Rosé valmistamiseks kasutatakse põhiliselt Special Cuvée segu, millele lisatakse väike kogus punast reserv veini (mida hoitakse korgi all magnum pudelites). Veini valmistamiseks on kasutatud 62% Pinot Noir, 24% Chardonnay ja 14% Meunier viinamarju, mis pärinevad 85% ulatuses “grand cru” ja “premier cru” aedadest. Punast veini lisatakse 5-6%, viinamarjad tulevad Bollingeri grand cru aedadest Ay’st ja Verzenay’st. Punase veini viinamarjad korjatakse vaid täiuslikus küpsuses, saagikus hoitakse äärmiselt madal ning vein laagerdub tammevaatides. 

Värvuselt on shampanja lõhe roosa. Aroomilt on vein kompleksne, unikaalse jõulise karakteriga, ideaalse maitse – aroomi tasakaaluga, väga delikaatse stiiliga. Maitselt eriti kuiv, täiusliku maitse ja küpse aroomiga. Tunda on vaarikaid ja jõhvikaid. Samas on rohkem tanniine kui Special Cuvée’s, mis annavad edasi punaste marjade nüansse. Dosage on 7-8 g/l kohta.

“First released in 2008, the NV Champagne Brut Rosé is the release based around the 2021 vintage. A medium salmon hue (only 5% red wine is added to the blend), the nose is beautiful and has a lovely touch of opulence in its notes of preserved Amarena cherries, ripe red fruit, toasted brioche, and fresh roses. The palate offers a luxurious feel, with power and elegance that suggest decadence, but it’s not sweet. It has a refined mousse, with a chalky and pithy, orange-tinged structure, wonderful length, and a good core that will easily age another 10 or more years.” Jeb Dunnuck 93+ points

“Bollinger is still a relative newcomer to the non-vintage rosé scene, having produced this cuvée only since 2008. But it was an instant match to the house style of rich and firm Pinot fruit. It takes a mere 5% of Pinot Noir wine from Verzenay and Aÿ to give this its desired colour (salmon, with delicate peachy hues) and character. The fine nose is characterised by pristine red fruitiness playfully intermingling with spicy complexity and mineral whiffs. Still primary in fruitiness, it comes with depth and complexity. The oak takes a supporting role, leaving the delicious Pinot fruit to the fore, and the well-built, muscular palate has a degree of vinosity. This is a non-vintage rosé that is worthy of ageing. “The latest release of Bollinger’s NV Brut Rosé is showing especially well, offering up complex aromas of sweet stone fruit, honeycomb, freshly baked bread and orange oil, followed by a medium to full-bodied, pillowy and vinous palate. “NV Champagne Brut Rose pours a bright pink salmon hue and jumps from the glass with a perfume of crushed roses, cardamom, ripe raspberry, and toasted brioche. Full-bodied, it’s juicy on opening, filling the palate with refined red fruit and blood orange, and has a rounded mousse as well as a long finish.
