PN AYC21 on Bollingeri Blanc de Noirs’i “7th release”. Veini idee on demonstreerida Bollingeri ühte peamist tugisammast Pinot Noir’d läbi erinevate veiniaedade. Igal aastal tuleb müügile 100% Pinot Noir’st valmistatud šampanja aga alati mõnest uuest külast või cru’st. Seitsmes väljalase PN AYC21 pärineb suuremas osas Aÿ küla aedadest, väiksemas osas on lisatud segule ka Pinot Noir marju Tauxieres ja Mutigny külade aedadest. Veini baasaastakäik on 2021 (51% segust), ülejäänud 49% segust on “reserve” veinid, reserve veinidest 75% on aastakäik 2019 (hoitud terasest mahutites) ja ülejäänud 25% on veinid aastakäikudest 2012, 2013, 2014 (kõik magnum pudelitest). Lõplik segu on pudelis küpsenud vähemalt 4 aastat, dosage on 8 grammi liitri kohta, disgorgement on tehtud juunis 2026.

The vineyards are situated at the heart of three important areas: the Côtes des Blancs, Montagne de Reims and Vallée de la Marne. “A cooler damp summer and no LGA produced means the choice of grapes was wide open. Bollinger being super strong in the south facing slopes of Ay bring that ripe fruit charm, wafts of bitter lemon and grapefruit combine with spicy red fruits like strawberry and peach blended with hints of spice from the 49% reserve wines back to 2012 in magnum, bring density and texture to the palate. This fits seamlessly into Champagne Bollinger’s extraordinary – in the truest sense of the word – series of special releases that highlight Pinot Noir from different villages. It all started in 2020 with the release of PNVZ15. In this case the starring Village is Ay, where most of the fruit is from, supplemented by Tauxieres and Mutigny. 49% of the blend is from the base year 2021, with 51% of reserves. 25% of reserve wines date to 2012, 2013, and 2014.
